About the Workshop
Learn foundational skills to make perfect doughs, pipe eclairs and choux pastries, create tantalizing tarts, and the art of baking and presenting a cake. You’ll leave with a repertoire of recipes to wow your family and delight your sweet dessert-loving friends. Students gain confidence working in a commercial kitchen, learning under a pastry chef. Whether you are a newcomer to baking, or a seasoned enthusiast, join us for this course, and consider the sister course in baking, The Art of Bread and Dough.
Practical Outcome
Students focus on different types of pastry, pie, tarts, and cake each week with hands-on, practical experience. Students receive our recipes and can recreate them at home!
CHEF APRON INCLUDED!
Students can EAT what they bake.
Tools and Attire
Students must wear non-slip, preferably steel toed shoes, black pants, and a white t-shirt.

The Art of PASTRY & PIE Workshop is offered in ONE way:
- Fully On Campus
This course is offered only as instructor led, inside our commercial kitchen, to give you hands-on training under the supervision of our master chef.
Baked Delights
- First Weekend:
- French Style Doughs
- Tart and Pie Fillings
- Pastry Cream Filling, Almond Frangipane
- Second Weekend:
- Choux Paste
- Dark Chocolate Ganache, Biscotti, Financier
- Third Weekend:
- Cake and Pie
- Vanilla Genoise, Seasonal Pie
Each class is FIVE hours in length, to allow for required baking times.
