When people think about becoming a chef, they usually picture beautifully plated meals or busy restaurant kitchens. The truth is.… every great chef starts somewhere much simpler—with the basics.
Knife skills, food safety, proper seasoning, and learning how ingredients work together might not sound exciting at first, but these are the skills that build confidence in the kitchen. Once you have a strong foundation, everything else becomes easier.
One thing I’ve learned over the years is that cooking isn’t about memorizing recipes. It’s about understanding why a recipe works. When you know the techniques behind it, you can adapt, improve, and even create your own dishes.
At Affirm College, students spend time mastering these essential skills before moving on to more advanced techniques. It may seem repetitive at times, but those hours of practice are what separate a good cook from a great chef.
Every successful chef you admire started by learning the fundamentals. There’s no shortcut—and honestly, that’s what makes the journey worth it.
