Plant-based Nutrition certificate program

As more people adopt a plant-based lifestyle for health, ethical, and environmental reasons, the demand for plant-based nutrition education has skyrocketed. In response to this growing demand, eCornell and the T. Colin Campbell Center for Nutrition Studies have teamed up to launch a new Plant-Based Nutrition Certificate program.


This comprehensive program is designed for individuals who want to deepen their knowledge of plant-based nutrition and share that knowledge with others. The program covers everything from the health benefits of a plant-based diet to cooking and meal planning, and it is taught by some of the leading experts in the field.


The program is entirely online, making it accessible to anyone with an internet connection. It consists of six courses, each of which takes around two to three weeks to complete. The courses are as follows:

  1. Introduction to Plant-Based Nutrition
  2. Diseases of Affluence
  3. Nutrition and Society
  4. Diet, Detoxification, and Elimination
  5. Holistic Health and Healing
  6. Plant-Based Nutrition for Athletes and Fitness Enthusiasts

Introduction to Plant-Based Nutrition

This course provides an overview of plant-based nutrition, including the benefits of a plant-based diet for human health and the environment. It also covers the different types of plant-based diets, such as vegetarianism and veganism, and provides tips for making the transition to a plant-based diet.


Diseases of Affluence

This course covers the link between diet and chronic diseases such as heart disease, diabetes, and cancer. It explores the role of animal products, processed foods, and sugar in the development of these diseases, and highlights the health benefits of a plant-based diet in preventing and reversing chronic diseases.


Nutrition and Society

This course examines the social and cultural factors that influence our dietary choices and explores the impact of our food choices on the environment and other living beings. It also covers the ethical and philosophical arguments for adopting a plant-based diet.


Diet, Detoxification, and Elimination

This course explores the role of plant-based diets in detoxification and elimination, including the benefits of fiber, antioxidants, and phytonutrients. It also covers common health concerns related to digestion and elimination and provides practical tips for maintaining a healthy digestive system.


Holistic Health and Healing

This course takes a holistic approach to health and wellness, exploring the mind-body connection and the role of plant-based diets in promoting overall health and well-being. It covers topics such as stress management, sleep, and exercise, and provides tips for achieving optimal health through a plant-based lifestyle.


Plant-Based Nutrition for Athletes and Fitness Enthusiasts

This course is specifically designed for athletes and fitness enthusiasts who want to optimize their performance through plant-based nutrition. It covers topics such as protein, carbohydrates, and micronutrients, and provides practical tips for fueling your workouts with plant-based foods.


Throughout the program, students will have access to a wealth of resources, including video lectures, readings, quizzes, and assignments. They will also have the opportunity to connect with other students and faculty members through discussion forums and live Q&A sessions.


Upon completion of the program, students will receive a Plant-Based Nutrition Certificate from eCornell and the T. Colin Campbell Center for Nutrition Studies. This certificate can be used to demonstrate expertise in plant-based nutrition to employers, clients, and other stakeholders.
